La Specialista Maestro gives you the tools to craft the authentic barista experience, with precise control over grinding, dosing and temperature settings. We suggest to use a grind size between 4 and 6 for the optimal Cold Brew extraction. Generally speaking, for the extraction of Cold Brew a coarser grind is recommended.

Hot and Cold water flow through 2 separate circuits, however we recommend to perform a cold rinse through the dedicated rinse button, after selecting a cold recipe (Cold Brew, Espresso Cool). When a cold extraction recipe is selected, the rinse button delivers cold water, this will not only make sure that the group is clean, but it will also cool it down for the optimal extraction, especially after a hot recipe.
Cold Brew is an extraction method which takes place at ambient or cold temperature and without pressure. The pump on the La Specialista runs with a dedicated program which extracts coffee withouht producing pressure, this is why the pressure gauge should not move.
If during Cold Brew extraction the pressure gauge climbs up then you can try to make the grind size coarser.
