Until not long ago, roasting was an art because roasters didn’t have any kind of reference to base themselves on so experience counted a lot. Nowadays, technology gives roasters the right tools to replicate specific roasting curves, ensuring the same result in every cup. Maurizio says that raw materials affect the outcome by 50%. Obviously the other 50% depends on the quality of roasting.
