Remove the paddle from the bowl.
Put the meat in the bowl, pour in the water, wine and soy sauce. Add the washed carrots, bay leaf and pepper. Close the lid, select the POT function, select power level 4, set 90 minutes and press the program start/stop button. After 10-15 minutes, lower the power level to 2.
In the meantime chop the garlic. When the set time has finished, eliminate the excess water, remove the meat and cover the bottom of the bowl with greaseproof paper. Roll the meat in a mixture of chopped garlic, salt, vegetable oil, mustard, chilli peppers and dried herbs and put in the middle of the bowl.
Close the lid, select the OVEN function, select power level 2, set 20 minutes and press the program start/stop button.
Slice the meat when cool.

Pork loin: 1 Kg
Water: 1lt
Dry wine: 100 ml
Soy sauce: 125 ml
Whole black peppercorns: 1 tablespoon
Bay leaves: 5
Carrots: 1
Paprika: 1 tablespoon
Dried herbs: 1 tablespoon
Vegetable oil: 2 tablespoons
Mustard: 1 tablespoon
Garlic: 3 cloves
Salt: 1 teaspoon
