  1. Boil the potatoes for about 40 min and then mash them.
  2. Coarsely chop the washed courgettes in a food processor. In a separate bowl, thoroughly mix the potatoes, courgettes, egg, salt, pepper and grated cheese. Add the flour and bread crumbs, if necessary, until the mixture is uniform and dry.
  3. Make croquettes by hand and dip first in beaten egg and then in bread crumbs. Repeat the operation for double breading.
  4. Remove the paddle from the bowl.
  5. Put the oil inside the bowl, close the lid, select the OVEN program, set power level 3, set 15 min and press the program stop/start button.
  6. Preheat the oil for about 1 minute then insert 8-10 croquettes depending on size.
  7. Turn the croquettes 1-2 times during cooking until brown on both sides.
  8. Repeat the operation until all are cooked.

  • potatoes: 700gr
  • courgettes: 300 gr
  • eggs: 2
  • Parmigiano cheese: 50 gr
  • Italian flour (type 00): 75gr
  • bread crumbs: to taste
  • salt: to taste
  • pepper: to taste
