Muffins with courgettes and cinnamon

  1. Beat the eggs with the sugar and salt and add the yoghurt and lemon juice. Sift the flour, baking soda, cinnamon and baking powder, stir in little by little and then add the melted butter. Chop the walnuts in a food processor and add to the batter.
  2. Wash the courgettes, remove the ends and grate coarsely.Squeeze the lemon juice and add to the batter along with the courgettes. Mix until uniform.
  3. Remove the paddle from the bowl.
  4. Fill the muffin cups with the batter and put them in the bowl. Close the lid, select the CAKE program, select power level 2, set 35 minutes and press the program start/stop button.
  5. Allow to cool before serving.

  • Yoghurt: 100 ml
  • Sugar: 100 gr
  • Salt: half teaspoon
  • Flour: 300 gr
  • Courgettes: 450 gr
  • melted butter: 50 gr
  • lemon juice: 1 tablespoon
  • baking powder: 1 teaspoon
  • baking soda: 1 teaspoon
  • Cinnamon: half teaspoon
  • Walnuts: 25 gr
