Method

Put the flour in a bowl, make a hole in the centre and add all of the other ingredients.
Knead thoroughly by hand until the dough is smooth and soft, shape it into a ball and let it rise in a bowl with flour sprinkled on the bottom.
Cover with a clean cloth and set in a warm location, away from air currents. After the dough has risen for 1 hour, divide into 8 equal parts and roll out to create 8 circles
Fill each calzone with the desired ingredients, fold over to make a half-moon shape and seal the edges well with a fork.
Remove the paddle from the bowl.
Oil the bottom of the bowl and put the 4 mini calzones in (brush each calzone with a little tomato puree).
Close the lid, select the PIZZA program, set power level 2, set 20 minutes and press the program start/stop button.
At the end, add the other 4 calzones.
Ingredients
Ingredients for 8 mini calzones::
water: 280ml
italian flour (type 00): 250gr
Manitoba flour: 250gr
fresh yeast: 12 gr
olive oil: 7gr
salt: 10gr
sugar: 5gr
Ingredients for the filling::
mozzarella: 250gr
tomato puree: 150 gr
oregano: to taste
salt: to taste
