  1. Put the flour in a bowl, make a hole in the centre and add all of the other ingredients.
  2. Knead thoroughly by hand until the dough is smooth and soft, shape it into a ball and let it rise in a bowl with flour sprinkled on the bottom.
  3. Cover with a clean cloth and set in a warm location, away from air currents. After the dough has risen for 1 hour, divide into 8 equal parts and roll out to create 8 circles
  4. Fill each calzone with the desired ingredients, fold over to make a half-moon shape and seal the edges well with a fork.
  5. Remove the paddle from the bowl.
  6. Oil the bottom of the bowl and put the 4 mini calzones in (brush each calzone with a little tomato puree).
  7. Close the lid, select the PIZZA program, set power level 2, set 20 minutes and press the program start/stop button.
  8. At the end, add the other 4 calzones.

  • water: 280ml
  • italian flour (type 00): 250gr
  • Manitoba flour: 250gr
  • fresh yeast: 12 gr
  • olive oil: 7gr
  • salt: 10gr
  • sugar: 5gr
  • Ingredients for the filling::
  • mozzarella: 250gr
  • tomato puree: 150 gr
  • oregano: to taste
  • salt: to taste
