Baked chicken roulades with dried apricots

  1. Cut the chicken lengthwise into 8 pieces. Spread the fillets on a flat surface and dry with a cloth.
  2. Wash the spinach leaves, cut the dried apricots into 3 pieces and cut the cheese in strips.
  3. On each piece of chicken put some spinach leaves, cheese strips and dried apricot pieces. Roll up the fillets and secure with a toothpick.
  4. Remove the paddle from the bowl.
  5. Pour the oil in the bowl and arrange the roulades on top. Close the lid, select the AIRGRILL program, select power level 3, set 40 minutes and press the program start/stop button. 10 minutes before cooking is complete, turn the roulades.
  6. They can be served as a hot or cold snack, slicing the meat to show the filling.
  7. Variation: try rolling a slice of bacon on each one.
