Quiche with radicchio and speck ham

  1. Beat the eggs, cream, grated cheese and milk in a bowl with some salt and pepper.
  2. Remove the paddle from the bowl.
  3. Roll out the puff pastry with the baking paper underneath it and prick the bottom with the tines of a fork.
  4. Put the cubed speck and cooked radicchio in the bottom (see the recipe for "Radicchio sauce"). Pour the egg mixture evenly over the radicchio.
  5. Roll the edges of the dough towards the middle and using a pair of scissors, cut off the excess baking paper (it is a good idea to leave a few parts for turning the quiche and removing it).
  6. Close the lid, set the thermostat dial to position 3, press the bottom heating element button and press the on/off button. Cook for 15 min. and then turn the quiche 180° (using the baking paper).
  7. Cook for another 8 min.


  • Puff pastry: 1 roll
  • Pre-cooked radicchio (see recipe): 200 gr
  • Cubed speck: 120 gr
  • Cooking cream: 100 ml
  • Eggs: 2
  • Grana Padano cheese: 20 gr
  • Milk: 50 ml
  • Salt: to taste
  • Pepper: to taste
