Ingredients

  • chicken: 400 gr
  • carrots: 2
  • celery: 2 stalks
  • onion: half
  • peanut oil: lev 5
  • tomato paste: 2 tablespoons
  • Vialone nano rice: 480gr
  • vegetable stock: 1500ml
  • butter: to taste
  • Parmigiano cheese: to taste

Method

  1. Insert the paddle in the bowl.
  2. Dice the celery, carrot and onion and put inside the bowl along with the oil.
  3. Close the lid, select the STEW/RICE program, set power level 4, set 35 minutes and press the program start/stop button.
  4. Sauté for 4-5 minutes then add the chicken in large pieces, the tomato paste thinned in a glass of water, salt and pepper.
  5. After 20 minutes, lower the power level to 3 and finish cooking.
  6. Remove the chicken from the bowl and fillet.
  7. With the sauce made while cooking the chicken, start preparing the rice. If the sauce is too dry, add some oil then close the lid, select the STEW/RICE program, set power level 4, set 20 min and press the program start/stop button.
  8. Sauté for 2-3 mins then add the rice, some stock and continue cooking, adding the remaining stock a little at a time. Add the chicken about halfway through cooking. When cooking is complete (the cooking time may vary according to personal preference), salt if needed and stir in the butter and parmigiano cheese.
  9. Serve.
