Ingredients

  • Aubergines: 750 gr
  • Celery: 250 g
  • Onion: 1
  • Olives: 135 gr
  • Capers: 25 g
  • Pine nuts: 60 gr
  • Ripe tomatoes: 400 g
  • Sugar: 50 g
  • Stock: 300 gr
  • Vinegar: 100 g
  • Olive oil: lev. 5
  • Salt: to taste

Method

  1. Chop the aubergines and celery and slice the onions.
  2. Insert the paddle in the bowl.
  3. Put the onion and oil in the bowl, close the lid, select the POT program, set power level 4, set 60 minutes and press the program start/stop button.
  4. Sauté the onion for 4 minutes
  5. Add the celery, aubergines and stock and cook for another 25-30 min.
  6. Add salt and pepper, pine nuts, chopped tomatoes, capers and olives and cook for another 15 min
  7. Add the sugar and vinegar and finish cooking.
