Put all the ingredients in a large bowl and work into a paste with your hands.
Form into meatballs, about 2 inches in diameter, and dredge with the flour.  Let the meatballs rest in the refrigerator.

Heat the oil to 160°C.  Fry the meatballs, a few at a time, for a few minutes, turning them if necessary.


  • 500 gr of chopped beef (or a mixture of beef and lamb)
  • 1 or 2 yellow onions, chopped fine
  • Finely chopped parsley
  • Oregano
  • 2 slices of bread, soaked in water and squeezed to eliminate all moisture
  • 1 tbsp extra-virgin olive oil
  • Flour for dredging
  • Peanut oil for frying
