  • Almonds: 250 g
  • Sugar: 160 g
  • Eggs: 6
  • Orange: grated zest
  • Lemon: grated zest
  • Almond extract: 5 drops


  1. Chop the almonds in a food processor until they become a fine flour
  2. With an electric mixer, whip the egg yolk with the sugar, add the grated lemon zest, almond extract and the almond flour.
  3. Whip the egg whites separately and gently fold them into the rest of the ingredients
  4. Remove the paddle from the bowl.
  5. Butter and flour the bowl and put the batter inside.
  6. Close the lid, set the thermostat dial to position 2, press the bottom heating element button and press the on/off button.
  7. Cook the cake for 35 min
  8. For the final touch, cut a Santiago cross out of cardboard, put it in the centre of the cake and sprinkle with icing sugar. When the cross is removed, the outline will remain on the cake
