  1. Remove the paddle from the bowl.
  2. Chop the onion and put in the bowl with the oil, close the lid, set the thermostat to position 3, press the bottom heating element button and press the on/off button. Sauté for 4 min.
  3. Add the lightly floured beef shanks (we recommend cutting the outer membranes to keep them from curling during cooking), white wine, salt and pepper and cook for 6 min.
  4. Turn the shanks, add the broth and cook for another 50 min, turning the meat once or twice.
  5. At this point, add the "gremolada", which is a mixture of minced parsley, the grated zest of half a lemon and a minced garlic clove and continue cooking for the remaining 10 min.
  6. Serve hot with the sauce that is in the bowl.
