  1. Put the flour, sugar, eggs, butter just removed from the refrigerator and cut into pieces, plus a pinch of salt in the mixer.
  2. Blend all of the ingredients until the dough is compact and quite elastic. Let it rest in the refrigerator for at least a half hour.
  3. Remove the paddle from the bowl.
  4. Butter and flour the bottom. Roll 2/3 of the dough out to a thickness of 3-4 mm and put it in the bottom of the bowl, then carefully cut off the edge.
  5. Prick the bottom with the tines of a fork and spread the jam evenly over the top with a spoon.
  6. With the left over dough, make strips to crisscross over the jam.
  7. Close the lid, set the thermostat dial to position 2, press the bottom heating element button and press the on/off button.
  8. Cook for 40 min and then turn off the bottom heating element.
  9. Cook for another 10 min. Once it is cooled, turn it upside down on a plate and serve.
