Salmon in pastry with spinach

  1. Remove skin from raw salmon filets and season fish with salt and pepper. Set aside
  2. With the paddle in the bowl, add spinach, garlic, pine nuts, water, olive oil, salt and pepper. Set power level to position 2, and saute spinach for 3-5 minutes until spinach is wilted.
  3. Lay a 9 1/2 by 9 1/2-inch sheet of puff pastry onto a piece of parchment. Cut in half, and roll each piece slightly.
  4. Place half of the spinach onto the botton half of one piece of prepared puff pastry, leaving about a half inch for sealing the dough. Add one salmon filet on top and season with salt and pepper.
  5. Fold the puff pastry over salmon and spinach and seal the sides using the tines of the fork. Using a sharp knife, cut three to four small slits on the top to let steam out. Repeat with other pastry and salmon filet.
  6. Remove paddle from bowl, and place 10-inch round piece of parchment on the bottom. Place the two pastry wrapped salmon pieces in the bowl.
  7. Turn power level to position 3 and cook for 25-30 minutes until pastry has a light brown color and is cooked through. Remove from bowl and let cool 5 minutes before serving.


  • salmon filet: 2 6 oz pieces
  • salt: to taste
  • pepper: to taste
  • spinach: 4 cups
  • garlic, sliced: 2 cloves
  • pine nuts, optional: 2 tbsps
  • water: 2 tbsps
  • olive oil: 2 tbsps
  • sheet of puff pastry, thawed: 1 sheet (8.65 oz)
