Twice Baked Cheddar Potatoes with Bacon

  • baking potatoes: 4
  • cheddar cheese, shredded: 1 cup
  • sour cream: 3/4 cup
  • milk: 1/4 cup
  • butter: 4 tbsp
  • salt: 1 tsp
  • cooked crispy bacon: 4 slices
  • scallions, thin sliced: 3

  1. Turn the function selection dial to convection and preheat the oven to 425ºF.
  2. Place the potatoes on the wire rack and bake until fork-tender, about 50 – 60 minutes. Reduce the oven temperature to 375ºF.
  3. Cut each potato in half lengthwise. Scoop out the flesh, leaving a 1/4-inch layer in each shell. Transfer the flesh to a large bowl.
  4. Mash the potatoes with the cheese, sour cream, milk, butter, and salt. Spoon the filling evenly into the shells. Top with the bacon and scallions.
  5. Place the stuffed potatoes on the baking tray and bake until the filling is hot in the center and the edges are lightly browned, about 30 minutes.
