Sausage and Pepper Fritatta

  • olive oil: 1 tbsp
  • sweet Italian sausage patties: 2
  • red bell pepper, coarsely chopped: 1
  • onion, sliced thin: 1
  • large eggs: 4
  • half and half: 2.5 cups
  • salt: 1/2 tsp
  • ground nutmeg: pinch
  • loaf of crusty French bread, cut into 1 1/2 in cubes: 1/2 or 8 oz.
  • sharp cheddar cheese, shredded: 1 cup
  • scallions, sliced thin: 2

  1. Heat the oil in a large skillet over medium-high heat. Add the sausage and cook until browned, about 8 minutes. Add the peppers and onion and cook, stirring occasionally, until the vegetables are softened, about 8 minutes.
  2. Turn the function selection dial to bake and preheat the oven to 375ºF. Spray a 1 1/2-quart baking dish with nonstick spray.
  3. Whisk together the eggs, half-and-half, salt, and nutmeg in a large bowl. Stir in the bread and let soak at least 15 minutes.
  4. Spoon the sausage mixture into the baking dish. Pour the egg mixture evenly over the sausage mixture. Sprinkle with the cheese and scallions. Bake until the filling is set and a knife inserted in the center comes out clean, 35 – 40 minutes. Serve warm or at room temperature.
