Peaches and Brie Tartine

  • Peach, cut into 1/2 in thick slices: 1
  • Sugar: 1 tbsp
  • Country-style raisin walnut bread: 4 slices
  • Peach preserves: 2 tbsp
  • Dijon mustard: 1 tbsp
  • Fresh rosemary, chopped: 1 tsp
  • Brie cheese, thinly sliced: 3 oz

  1. Insert the grill plate and turn the temperature on the lower grill plate to 430ºF. Preheat the grill.
  2. Combine the peach preserves, mustard, and rosemary in a small bowl.
  3. Toss the peach slices and sugar in a medium bowl until well coated. Place the peach slices on grill and cook until the peaches begin to caramelize, about 4 – 5 minutes per side.
  4. To make the tartines, spread the preserves mixture evenly on the bread slices. Top each with the brie and peach slices. Set the upper plate temperature to 400F. Place the tartines back on the grill in the "open broiler mode". Float the top plate above the tartines and grill until the cheese just begins to melt slightly, about 3 minutes.
