  • Light mayonnaise: 1/4 cup
  • Extra virgin olive oil: 1/4 cup
  • Parmesan cheese, grated: 1/4 cup
  • Lemon juice: 2 tbsp
  • Dijon mustard: 1 tbsp
  • Anchovies, rinsed and dried: 3
  • Garlic clove: 1
  • Coarse black pepper: 1/2 tsp
  • Salt: pinch
  • Lacinato kale leaves, tough stems removed and torn into pieces: 2 bunches
  • Croutons: 1 cup
  • Parmesan shavings: 1/4 cup

  1. Turn the temperature on the lower plate of the grill to 400º and preheat the grill.
  2. To make the dressing, place the mayonnaise, olive oil, cheese, lemon juice, mustard, anchovies, garlic, pepper, and salt in a mini food processor and pulse until well mixed.
  3. Lightly spray the kale leaves with olive oil cooking spray sprinkle lightly with salt. Working in batches, grill the kale until the edges begin to char and the kale begins to wilt, about 4 minutes. Transfer to a large bowl; drizzle with some of the dressing. Add the croutons; toss lightly to coat. Sprinkle with the Parmesan shavings. Serve with the remaining dressing on the side.
