Apple Cinnamon Churro Waffles

  • All-purpose flour: 3/4 cup
  • Cinnamon: 1 tsp
  • Ground nutmeg: 1/4 tsp
  • Water: 1.5 cups
  • Butter: 1 Stick
  • Sugar: 2 tbsp
  • Salt: 3/4 tsp
  • Eggs: 3 large
  • Granny Smith apple, finely chopped: 1/2 small
  • For Cinnamon Sugar::
  • Sugar: 1/2 cup
  • Ground cinnamon: 3/4 tsp
  • Butter, melted: 1/2 stick

  1. Combine the flour, cinnamon, and nutmeg in a small bowl.
  2. Bring the water, butter, sugar, and salt to a boil in a medium saucepan, stirring until the butter is melted, about 1 minute. Remove the saucepan from the heat. Add the flour mixture all at once, stirring vigorously with a wooden spoon until the mixture is smooth. Add the eggs, one at a time, beating well after each addition, until the batter is glossy and smooth. Stir in the apple. The batter will be stiff, not pourable.
  3. Lightly spray the upper and lower waffle plates with nonstick spray. Set the function dials to the waffle setting and preheat the waffle plates.
  4. Spread 1/2 cup of batter into the center of each lower waffle plate, spreading the batter to the edges with a heatproof rubber spatula. Close the lid and cook until the waffles are browned and crisp, 8 – 10 minutes. Open the lid and carefully transfer the waffles to a plate.
  5. Combine the sugar and cinnamon in a small bowl. Brush the waffles with the melted butter, and sprinkle with the cinnamon sugar.
