Ingredients
cross-cut beef shanks: 1 kg
onion: 1
white wine: 100ml
hot stock: 750 gr
sunflower oil: lev 5
flour: to taste
salt, pepper: to taste
parsley: 1 bunch
grated lemon zest: 1/2
garlic: 1 clove
Method

Remove the paddle from the bowl.
Put the chopped onion and oil in the bowl, close the lid, select the POT program, set power level 4, set 90 minutes and press the program start/stop button.
After 2-3 minutes add the lightly floured shanks (we recommended cutting the membranes around the bone to keep the shanks from curling during cooking) along with the salt and pepper and cook well on both sides.
After about 10 mins, add 150 g of stock and cook for the set time, lowering the power level as soon as it starts boiling rapidly and adding the remaining stock a bit at a time.
About 10 mins before the end of cooking, add the gremolata, which is a mixture of chopped parsley, lemon zest from half a lemon and a clove of garlic.
Serve hot with the sauce that is in the bowl.
