Standard temperature can fluctuate based on many factors but will be above 90° Celsius.

Changing to High temperature willadjust by only a maximum of 2° Celsius. With the machine on and ready, make sure the mode selection dial is set to Espresso Press and hold the "x 2" and "My" coffee buttons simultaneously for at least 3 seconds to access the water temperature setting.

The "water tank" and "tamp" light flash alternately and the "temperature" light remains on steady. This indicates you can choose the desired temperature setting. Press the button that corresponds to your desired temperature and the machine is ready to use.
