  1. Wash the aubergines under running water, dry and cut into cubes 1.5 cm per side.
  2. Insert the paddle in the bowl.
  3. Put the oil and peeled garlic in the bowl. Close the lid, select the POT program, set power level 4, set 30 minutes and press the program start/stop button.
  4. Sauté for 2 min then add the aubergines, stock, salt, pepper and finish cooking.
  5. During cooking, lower the power level if necessary. When cooking is complete, sprinkle with fresh, chopped parsley before serving.
