Herb and Garlic Stuffed Mussels

Ingredients

  • Italian style bread crumbs: 1/2 cup
  • Parmeseasn cheese, grated: 1/4 cup
  • olive oil: 3 tbsp
  • fresh parsely, chopped: 3 tbsp
  • resh rosemary, chopped: 2 tbsp
  • garlic cloves, minced: 2
  • mussels, scrubbed: 2 lbs

Method

  1. Bring a large saucepan with 1 inch of water to a boil. Add the mussels. Reduce the heat and simmer, covered, until the mussels open, about 5 minutes; drain.
  2. Turn the function dial to broil/grill. Ccombine the bread crumbs, cheese, oil, parsley, rosemary, and garlic in a small bowl. Combine the bread crumbs, cheese, oil, parsley, rosemary, and garlic in a small bowl.
  3. Remove and discard the top half of each shell. Arrange the mussels in their shells on the baking tray. Spoon about 1 tablespoon of the bread crumb mixture over each mussel. Drizzle each with a little olive oil.
  4. Place the baking tray in the oven on position 3 and broil until the mussels are heated through and the topping is golden, about 3 minutes
