Buckwheat Waffle with Fruit Salsa

Ingredients

  • For Fruit Salsa::
  • Mango, peeled and cubed: 1
  • Kiwi, peeled and cubed: 2
  • Maple syrup: 2 tbsp
  • Lime juice: 2 tsp
  • For Waffles::
  • Oat flour: 1.5 cups
  • Buckwheat flour: 1.5 cups
  • Sugar: 3 tbsp
  • Baking Powder: 1 tbsp
  • Baking soda: 3/4 tsp
  • Salt: 3/4 tsp
  • Large eggs: 3
  • Melted butter: 1/2 cup or 1 stick

Method

  1. Combine the mango, kiwi, syrup, and lime juice in a medium bowl; set aside.
  2. Lightly spray the upper and lower waffle plates with nonstick spray. Set the function dials to the waffle setting and preheat the waffle plates.
  3. Combine the oat flour, buckwheat flour, sugar, baking powder, baking soda, and salt in a medium bowl. Whisk together the eggs, buttermilk, and butter in a separate large bowl. Add the flour mixture, stirring until just combined.
  4. Pour half of the batter into the center of each lower waffle plate, spreading the batter to the edges with a heatproof rubber spatula. Close the lid and cook until the waffles are browned and crisp, 3 – 5 minutes. Serve with the fruit salsa.
