The typical mixed fry of shrimp and squid is a classic seafood dish that is prepared and loved throughout the Italian peninsula all year round. Very popular with young and old alike this “fish fry” is always fresh and satisfying and is often served during the Christmas holidays.
We propose this delicious dish accompanied by a delicate and aromatic mayonnaise and yogurt sauce flavoured with fresh chives to make it even more inviting.
Prepare the sauce: Mix the yogurt, mustard and mayonnaise until smooth, add the chopped chives and salt to taste. Cover with plastic wrap and leave in the refrigerator for about 15 minutes.
Clean the shrimp, removing the head (and, if you want, the legs). Clean the squid by removing the skin and the head. Carefully remove the eyes and the hard “tooth” at the centre of the tentacles. Remove the innards and the cartilage . Rinse all the parts well.
Drain and dry the fish with paper towels, then cut the squid into rings about 1 cm thick.
Flour all the pieces well and fry in hot oil (160°C) until golden (at least 3-4 minutes for each batch). Drain on paper towels to eliminate the excess oil.
Serve very hot, accompanied by the yogurt-mayonnaise sauce and the chopped chives.
