Method

  1. Mix together the flour, baking powder, salt and a quarter of cup of sugar
  2. Sift it and mix in the milk and melted butter until it becomes thick
  3. Melt a cup of sugar in a small saucepan over a low flame
  4. Stirring slowly add a cup and a half of strong hot coffee, the potato starch and the cold coffee
  5. When it is all blended add it to the first mixture and bring to a boil, while stirring, until thick
  6. Remove from the flame and add in two tablespoons of butter and the rum
  7. Cut the bananas in large, uniform chunks, dip in an egg and flour batter and fry in hot oil until golden brown
  8. Drain and serve with the sauce.

  • 1/3 cup milk
  • 2 tsp butter
  • 1 cup sugar
  • 1 ½ cups hot coffee
  • ½ cup cold coffee
  • 2 tbsp potato starch
  • 2 tsp rum
  • 2/3 bananas
  • 1 egg
  • For the sauce:
  • 1 cup of flour
  • 2 tbsp of baking powder
  • 1 tsp of salt
  • ¼ cup of sugar
