Pakoras are a fried vegetable croquette.  They are typical of Indian cuisine but are also eaten in other Asian countries. In India they can be found at all the street vendors where there are usually a lot of people waiting in line.  The pakora is a typical street food, eaten on the run, usually accompanied just by a drink.
Preparation:
Thinly slice the sweet pepper, the spinach, the onion and the boiled potato. Mix all the other ingredients with enough cold water to make a batter.  Heat the oil to 160° C:  as soon as it is hot enough dip the prepared vegetables, one by one, into the batter and fry until golden and crisp.  Serve hot.
In India these pakora are usually served with a dipping sauce called “timorando” but if you can’t find this, then use another sweet-sour sauce – even ketchup – according to your taste.  

Ingredients

  • 1 large potato, boiled
  • ½ cup sweet corn
  • 1 medium onion
  • 5/6 spinach leaves
  • 1 small sweet pepper
  • 2 tbspn garam masala
  • 2 tsp coriander
  • 1 ½ cups of chickpea flour
  • 3 tbspn of flour
  • 1 tsp hot pepper
  • 1 tsp lemon juice
  • 1 tsp of baking soda
  • Oil for frying
