Ingredients

  • water: 280ml
  • all-purpose flour (00): 250 gr
  • Manitoba flour: 250 gr
  • fresh yeast: 12gr
  • olive oil: 7gr
  • salt: 10 gr
  • sugar: 5gr
  • mozzarella: 250 gr
  • tomato puree: 150gr
  • oregano: to taste
  • salt: to taste

Method

  1. Put the flour in a bowl, make a hole in the centre and add all of the other ingredients.
  2. Knead thoroughly by hand until the dough is smooth and soft, shape it into a ball and let it rise in a bowl with flour sprinkled on the bottom.
  3. Cover with a clean cloth and set in a warm location, away from air currents. After the dough has risen for 1 hour, divide into 8 equal parts and roll out to create 8 circles
  4. Fill each calzone with the desired ingredients, fold over to make a half-moon shape and seal the edges well with a fork.
  5. Remove the paddle from the bowl.
  6. Oil the bottom of the bowl and put the 4 mini calzones in (brush each calzone with a little tomato puree).
  7. Close the lid, set the thermostat to position 3, press the bottom heating element button and press the on/off button.
  8. Cook for 15-20 min. When finish, put the other 4 calzones in the bowl.
